Strawberry Bruschetta

Ingredients

  • 1 fresh baguette, sliced into 1/2 inch rounds
  • olive oil
  • 1 tsp sea salt
  • 2 cups strawberries, sliced or diced according to preference
  • 1 oz crumbled feta cheese
  • 2 tbsp fresh basil, julienned
  • balsamic vinegar, for drizzling

Instructions

  1. Preheat oven to 400° F.
  2. Arrange baguette rounds in a single layer on a baking sheet. Brush the tops evenly with a light layer of olive oil, or mist evenly using a misto, or similar device.
  3. Sprinkle the rounds with sea salt.
  4. Bake until the bread is toasted and lightly golden, about 8-10 minutes.
  5. Top rounds with strawberries, then sprinkle with feta cheese and fresh basil. Lastly, drizzle with balsamic vinegar. You may wish to use more or less depending on your taste.

Notes

Don’t like feta? Just sub goat cheese!
