Sheet Pan Breakfast Hash


Description

Crispy potatoes, smokey spice, runny yolks, and a bit of sweetness comes together in this easy and gorgeous sheet pan breakfast.


Ingredients

  • 1 large sweet potato, diced
  • 1 russet potato, diced
  • 1 small onion, diced
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tsp smoked paprika
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 4 breakfast sausage links
  • 5 eggs
  • 2 tbsp. sliced green onion (optional)

Instructions

  1. Preheat oven to 400 degrees F. Line a half sheet pan with parchment paper or aluminum foil
  2. Mince the garlic cloves. Spread the sweet potato, russet potato, and onion out evenly on the sheet pan.
  3. Toss the potatoes and onion with the olive oil, paprika, red pepper flakes, garlic, and salt.
  4. Bake for 20 minutes, flipping the potatoes halfway through. Meanwhile, slice the sausage into rounds.
  5. After 20 minutes, remove from the oven and flip the potatoes again. Add the sausage. Create wells in the potatoes for the eggs. Crack the eggs into the wells and return to the oven for an additional 7-10 minutes, depending on how firm you like your yolks.
  6. Remove from the oven and garnish with green onions. Serve warm.
