Grits
- 2/3 c quick cooking grits
- 2 2/3 c water
- 1/2 c coijta cheese
- 1/2 lb chorizo
- bell peppers, sliced
- 1 onion, sliced
- 2 egg

Peppers and Onion
- Slice peppers and onions.
- In a large sauté pan, put 1 tablespoon olive oil. Over medium high heat, cook peppers and onion for 10-12 minutes or until onions are translucent.
Chorizo
- In a medium sauce pan over medium high heat, cook chorizo until done.
- Lay chorizo on paper towels to soak up any excess grease.
Coijta Grits
- Bring a medium sauce pan to a boil with the water.
- Add grits and turn saucepan down to low. Cover.
- Stir occasionally for 5 minutes or until grits are done.
- Add coijta cheese and let melt into the grits.
Over Easy Egg
- In a small sauté pan, crack egg over greased pan. Cook for 5 minutes or until egg white is cooked and become firm.
